Birria - 5 lbs beef chuck roast, fill pot with water just to the top of the meat and add 3.50 oz of Birria taco seasoning to pot and cook until meat is tender. Add to blender 2 cups of seasoned beef stock from the pot a med onion , 7oz dice tomatoes , 4oz of cilantro , 7 garlic cloves, 1/2 can chipotle , 1/4 can tomatoes paste and blend well and add to meat pot and simmer 30 minutes. Remove meat from pot and shred. Place a scoop of meat to corn or flour tortilla with the cheese of your choice and pan fry until taco is toasted on both sides . Enjoy with dipping each bite in birria sauce. Add cilantro and onion to taco “optional”
